im surprised the 25mm spacer was enough. the way the stock wheels sit, it seemed like we needed 300mm spacers

What happens at full suspension travel? Does the tire get cut by the fender?

no need to roll them they clear perfectly... tire selection is "KEY" you always want to look at the tire specs esp the tread width when installed. These are at 7.7" installed on an 8" wheel while something like a Kumho in the same size would be 8.1"
