There's many factors involved like atmospheric conditions, road conditions, tire tread conditions and the tires itself but when you're driving that fast, any subtle pressure changes on either side is going to effect the direction of the car. By you opening the window and sticking your hand out, you are creating a drag on the driver's side which acts as a brake on that side so the car will naturally want to veer left.
It's physics and normal to experience this.

At 70 mph that should not be enough to break traction

All I can think is that you inadvertently touched the steering wheel a little bit when you moved your arm . With a quick steering ration and high speed you could swerve quickly . Ill have to try opening the window on the highway and see if there's any turbulence. I have had the window open at high speed and my arm resting on the door with no issue .

My dad took my car for a few spins back when I borrowed it to him and he thought the steering was extremely sharp even in econ mode. I will admit, sometimes when I shift hard the force im putting out through my right hand on the shifter twists on my entire torso and the resut is my left hand yanks on the wheel a bit, causing a small swerve to acompany the shift. Its too easy with ectronically assisted steering, so im guessing something similar might have happened with your expirience. Cars don't veere off from opening windows and sticking your hands out, anyways...
